THE SUMMER MUNCHIES...

Alright. I admit it. I too, succumb to the munchies. Usually at about nine at night, over a steamy round of homework, (or telly). The thing is, if I’m going to snack anyway, why not try to snack a bit healthier? So, with this in mind, and with summer looming ahead, here’s a nice little nosh to get you through the most pernicious snack attack. I call it...Bode’s Waldorf Apple Slaw

1 medium red apple, washed, pared, cored, and halved

1 medium yellow apple, as above

2 tablespoons of lemon juice (please use fresh)

1/3 cup of sultanas (golden raisins)

1 stalk of celery, washed and sliced thinly

4 tablespoons of chopped walnuts (optional)

2-3 tablespoons of Miracle Whip or other salad cream

Into a medium bowl, shred both apples using the large grating bit of your vegetable grater. As you go, toss with lemon juice to prevent browning.

Add all the remaining ingredients and toss thoroughly. Chill at least one hour and consume on a hot day, (or night), with a cool glass of iced tea.
